In honour of Mother's Day on Sunday, and the fact that cooler weather is around the corner, I thought I would post one of my Mum's best and most simple soup recipes, chicken & corn soup. Sometimes life becomes to busy not to take a few short cuts so I often make a large batch (because I am not good at making only enough for one meal) of this soup and freeze it do give my family several easy lunches or dinners when who can be bothered making dinner. Chicken & Corn Soup
Chicken & Corn Soup
2 large onions (finely chopped)
2 chicken breasts (diced very finely)
4 packets of chicken noodle soup
12 cups of water
4 cans of creamed corn (420g)
Saute onion in a dob of butter. Add chicken and cook until white.
Add noodle soups and water
Cook for approximately 15-20 minutes. Add corn stirring continuously.
This recipe makes a large pot of soup so should cover a family for a couple of meals.
